we are doing a tasting menu that is fully plant-based and it's three michelin stars it's the big guns serious so this is a celebration of asparagus fried the sparrow this with dandelion and pickle asparagus with something and the third thing is coming that's an asparagus dumpling with asparagus inside and asparagus broth and it's made by asparaguses yes this is tostadas with garlic aioli and other radishes radishes tomburi straight from japan the seeds and horseradish.
we'll see how that goes from so bread and butter and clearly not real butter this is a coconut oil and it's cultured with with miso in the middle i believe wow smells good oh it's good little flowers look it's so pretty this is fava beans and chickpea underneath and candied something so this is brown rice with uh glazed peas and nepatella flowers sure oh pretty i see those like really nice patterns making it from uh soy milk we're getting from the oldest tofu house in chinatown it's called fung on they've been in business for over 100 years.
We're mixing that with some soybean's we're getting from new jersey kind of making this special blend of soy milk if you will for us hanging here with some artichokes they're already in your bowl some green garlic tapenade on top your spring topping here with some cute flowers arugula blooms it's a roasted artichoke sauce over top spicy a real mushroom is really the star of the show here and then um .
It's sitting on top on brace seitan then as well as on top here is some wilted spinach and some spring onion and then lastly what i've just poured for you is a spice morale sauce thank you potato white asparagus with white asparagus and white asparagus sauce and some potatoes that are preserved somehow okay ice cream with coconut it's like a ice cream sandwich this is a strawberry with asparagus no it's not asparagus strawberry with strawberry cornstarch.
And more strawberries and vanilla ice cream and something cherries and coffee and it's all hearts hearts breakfast what else a vermouth over ice cube that they make here not the ice cube i mean i'm sure the ice cube too a little more as well and yeah the coffee from before it's not a trip to new york city if you haven't seen you're getting a bit too quick steaming uh-huh well they say it's steam anyway i'm sure it's a totally healthy steam .
we forgot to show the gifts usually when you go to a michelin star place you you leave with gifts and the menu so that's the menu that we had last night let's just let's see i love the madison park the day we went asparagus and variations asparagus and some more asparagus more and more does it end on asparagus no that's the pretzel they don't have quite all the ingredients i'm sure there's a lot more that goes into that food hey trade secrets okay not everyone can do michelin star menu 5 and is this like granola or is it like it looks like cereal or something i don't know yeah it's really nice cool.
